Moong Flour (Green Bean Flour)
Green Bean Moong beans are commonly used in Indian and Chinese cuisine. They are generally eaten whole (with or without skin) or as bean sprouts, or used to make the dessert ‘green bean soup’. The starch of moong beans is also separated from the ground beans to make jellies and “transparent/cellophane” noodles. Vietnamese spring rolls are made from moong bean flour.
