Chinese Five Spice Powder
The fifth ingredient in Chinese five-spice powder is always a source of contention. The addition of star anise, cloves, fennel seeds, and cinnamon is required. The fifth spice is tricky; it can be either black peppercorns or Sichuan peppercorns. In China, it really depends on who you ask. Even in southern China, cinnamon is replaced with dried tangerine peel.
