Roasted Variyali (Roasted Fennel Seeds)
Roasted variyali seeds, also known as roasted fennel seeds, are a popular Indian snack that is often consumed after meals to aid digestion and freshen breathing. Fennel seeds are obtained from the fennel plant, which is native to the Mediterranean region and is widely cultivated in India and other parts of Asia.
Roasted variyali seeds are made by dry roasting fennel seeds in a pan until they turn slightly brown and release their aroma. The seeds are then cooled and can be eaten as a snack on their own or added to dishes as a flavouring agent. Roasted fennel seeds have a warm, sweet, and slightly liquorice-like flavour that is both refreshing and soothing.
